Molten Chocolate Cupcakes Recipe

I had baked these Molten Chocolate Cupcakes on the day of India's win against United Arab Emirates in the World Cup 2015. What better excuse to have baked goodies and calories than to enjoy the winning celebrations. I halved the recipe mentioned here and got just 2 cupcakes out of it. I had clicked only these two pics when my mobile battery died down and hence couldn't take a proper pic of the chocolate oozing out. Now who was going to wait for it to get charged when they looked so inviting and thus it got gobbled up immediately. Definitely I'll bookmark this post to present it once again with an updated picture. Till then watch the remaining matches and enjoy!!!



Chocolate Lava Cupcakes

Ingredients:
Unsalted butter - 1/2 cup
Semi-sweet chocolate - 170 gms, finely chopped
Eggs - 3 large, separated
Granulated white sugar - 1/3 cup
Pure vanilla extract - 1 tsp
Cream of tartar - 1/8 tsp
Granulated white sugar - 1 tbsp

Method:
Preheat the oven to 200C and place a rack in the center

Grease 4 ramekins generously and dust the insides with granulated white sugar

Place the molds on a baking sheet and set aside

Using the double boiler method, melt the butter and chocolate. Remove and keep aside

In a bowl using hand mixer, beat the egg yolks and 1/3 cups sugar until thick, pale and fluffy

Beat in the vanilla extract and then fold in the melted chocolate mixture

In another bowl, whip the egg whites until frothy. Add cream of tartar and continue to whip until soft peaks form. Gradually add 1 tbsp of granulated white sugar and whip just until stiff peaks form

Using a rubber spatula fold the beaten whites into the chocolate mixture, just until incorporated. Do not over mix

Put the batter into the prepared molds until 3/4 full

Bake for 10 to 15 minutes or until the outside edges are set but the middle still looks a little wet and wobbly

Remove from oven and let them cool for a minute or two

You can enjoy this cake in the mold itself or invert onto a serving plate and sprinkle with confectioners sugar or put a dollop of whipped cream or vanilla ice cream and enjoy
