This dum style of making pulao is really very delicious especially when you have your two favourite ingredients - spinach and potatoes. This healthy one pot meal is a treat in itself and does not required any gravy to go along with it.....

 Potato Spinach Pilaf

Ingredients: 
Potatoes - 2 medium, peeled and cut into cubes
Spinach - 1 cup, finely chopped
Basmati Rice - 2 cups
Onions - 1 medium, finely sliced
Bay leaf - 1
Cinnamon - 1 inch
Peppercorns - 2-3
Cloves - 3
Garlic - 5-6 cloves, finely chopped
Black pepper powder - 1/4 tsp
Garam masala powder - 1 tsp
Tomato - 1 medium, chopped
Yoghurt - 2 tbsp, whisked
Green chilli - 2, slit lengthwiseVinegar - 2 tsp
Salt - to taste
Oil/ Ghee

Method: 
In a pot, bring lots of water to a rolling boil point. Add salt and cloves

Add rice and when it starts boiling add vinegar. Cook till 90% done and strain. Keep aside to cool

In a kadhai heat oil and add the potatoes. Saute till they start turning brown in colour. Remove and keep aside

Add bay leaf, cinnamon, peppercorns and garlic. Fry till garlic starts turning brown

Add the onions and fry till golden brown

Add the tomatoes and fry for 2-3 minutes on high heat

Add spinach and potatoes and give a mix. Cook for few minutes

Lower the flame and add yoghurt and stir

Add green chillies, black pepper powder, garam masala powder and salt.

Cook it covered for around 5 minutes

Add rice over the masala and place it over a tava and simmer for 20 minutes

Gently fluff the rice and serve with raita
