Tomato Pasta

Ingredients:
Pasta -  1 1/4 cup
Tomato - 2, medium size, placed in boiling water for 5 minutes, skin peeled and cut into very small pieces
Onion - 1, small, finely chopped
Garlic - 3, finely chopped
Tomato sauce - 2 tsp
Oregano - 1/4 tsp
Chilli flakes - 1/4 tsp, adjust according to taste
Black pepper powder - a pinch
Salt - to taste
Olives - few pieces, chopped for garnishing
Olive oil
Method:
In a large pot, bring lots of water to a boil

Add the pasta and a little salt and cook till pasta is done, stir occasionally in between so that it does not stick to the bottom

Drain the pasta in a colander and run cold water over it  Keep it aside

For making the sauce, heat oil in a pan

Add garlic and saute for few seconds

Add onion and fry for few minutes or till it becomes soft

Add the tomatoes and cook for 2-3 minutes

Add 1/2 cup of water and bring it to a boil. Simmer for around 5 minutes

Add oregano, chilli flakes, black pepper powder and salt and stir till desired consistency is achieved

Add the cooked pasta in the sauce and mix well

Garnish with olives and serve immediately
